By The Almondista

Chocolate Chip Muffins


Incorporating the fresh almond drink in your muffin, will enhance moist and soft texture.


- 250g of Flour

- 250g of Dark Chocolate Chips (reserve some for the topping)

- 1 cup of water

- 2 tbsp of The almondista

- 100g Softened Butter

- 130g Sugar

- 3 Eggs

- 10g Baking Powder

- a pinch of salt


Blend the cup of water with the Almondista base to obtain your freshly made almond drink. In a bowl, combine butter and sugar, using electric whisks to achieve a creamy mixture. Add eggs one at a time, ensuring each is fully incorporated before adding the next. In a separate bowl, sift together flour and baking powder, then add the freshly made almond drink. Mix it with the egg mixture and add a pinch of salt. Add the chocolate chips and fold them with a spatula. Line a 12-cup muffin tin with paper cups and fill each about three-quarters full. Decorate with the reserved chocolate chips and bake in a preheated oven at 180°C for around 20 minutes. Conduct the toothpick test; if it comes out clean they are ready. Allow them to cool before serving and enjoy!
