Creamy Butternut Squash Soup


1 tbsp of The Almondista

1 cup water

2 tbsp. olive oil

3 cloves of minced garlic

1 small onion diced

3 cups of peeled and cubed butternut squash

3 cups of vegetable broth

Salt and pepper to taste

To Decorate:

2 tbs of freshly made Almondista drink 

Sunflower seeds


Heat the olive oil in a large pot over medium heat.

Sauté the onion until it is translucent. Add the garlic and stir well to avoid burning it.

Add the butternut squash to the pot and add salt and pepper. Pour in vegetable broth and bring to a boil.

Simmer on low for about 30 minutes or until squash is tender.

In the meanwhile blend 1 cup of water with 1 tablespoon of the Almondista base. To make freshly made almond drink and set aside.

Once the butternut squash is tender mix with an immersion blender. Add your freshly made almond drink and stir. 

Serve and decorate with some drink and sunflower seeds.
