Vegan Lemon Cake

 Have friends over for tea and need a sweet vegan treat? No worries! This simple vegan recipe has got you covered.


  • 4 tbsp of the Almondista base
  • 2 cup of water
  • 200g of Sugar
  • 250g of all-purpose flour
  • 100g of Vegetable oil:
  • 1 organic Lemon zest
  • 6g of Baking powder
  • Pinch of salt


  • 2 cups powdered sugar
  • 3 tbsp of the freshly made almond drink
  • Juice and zest of one organic lemon
  • Pinch of salt

Mix the Almondista base with the water in a mixer or with an electric frother for fresh almond drink and set aside.

Combine flour, sugar, baking powder, grated lemon zest, and salt in a large bowl. Pour in 1 cup (200ml) of freshly made almond drink (save some for the glaze) and vegetable oil. Use a hand whisk to mix until smooth.

Pour the batter into a 20 cm diameter pan and bake in a preheated oven at 180°C for 40 minutes or until a toothpick comes out clean. Once baked, let the cake cool.

While the cake cools, make the glaze. Whisk powdered sugar with 2/3 tbsp of almond drink that you made earlier, lemon zest, lemon juice, and salt until smooth. Drizzle the smooth glaze over the cake and surprise your guests with the fact that it's a vegan treat.
